Masala Dosa step by step

  1. Ajj main iss walay tawa py Dosa nonstick nahi hy. Tawa acha wash hona chahye..
  2. Dosa banany ky lye rice or daal ka sahi ratio + soaking buht zarori hy. 3/4 cup rice (yani teenchauthai)+ 1/4 cup daal (yani aikchauthai)+1/2 tsp meethidana aik bowl main ykja kar lain..
  3. Rice+daal+meethidana ko aiksath achi tarha wash kar ky soak krdain minimum 12hr ky lye.agar subh cook krna ho tu raat main soak krain.agar raat main cook krna ho tu subha soak karain..
  4. 12hr soaking ky baad daal chawal ka volume bhi increase hoga.soaking ka 1/2 cup pani save krlain cup main baqi pani drain krdain.1 Tsp fresh adrak cut kar ky add krdain..
  5. Put all ingredients together in blender & blend to soaking ka pani save kya tha,little little add krskty hain blend krny ky lye lekin buht ziada pani add nahi karna..
  6. Blended paste ko steel ky bartan main nikal lain. Paste bohat smooth nahi hoga, paste ki consistency halki si daanaydaar hogi (grainy), hath laganay par smooth texture nahi hoga..
  7. Dosa battar main 1/4 tsp salt add krdain.hath sy battar mix step bhi important hy.cover bowl. Kisi kapray main wrap kar ky 3-4 hr ky lye garam jaga rakh dain. (Inside cabnit or near open stove).this will help in fermentation.(ajkal mausam thanda hy warna garmi main wrap krny ki zaroorat nahi).
  8. Now we will prepare masala for dosa.peel,wash,boil potato till tender.mash aloo in bowl.there should be no big lumps in mash aloo..
  9. Mash aloo main salt,haldi,kashmiri mirch,cutti mirch,chop haradhania, chop harimirchain add kar ky achi tarha mix krlain. oil garam karain..
  10. Add raidana+kalonji in oil.let it pop. Add currypata leaves.fry few sec. Add aloo masala in oil..
  11. Fry masala in oil till it mix up nicely.we have use little oil, so masala dont leave oil aftr frying..
  12. Now masala is prepared & dosa batter has rested for atleast 3-4 hr. It's time to make dosa.when the cover is opened,either batter gives fermantation smell or it shows air bubbles on surface or it rise in volume.or you can experience all three things.once again give a quick mix to batter with hand..
  13. To fry a crispy dosa is a technique as well.prepare Tawa for frying dosa when tawa is well hot,low the flame, take handful of water in your palm & splash on tawa(as in pic) carefully. Water should be sizzling on tawa..
  14. Immediately clean water with towel as shown in pic.this step helps in lowering the temperature of tawa bx if we pour batter on hot tawa it will stick on should all be done in minimum time, lower the flame now..
  15. Take a ladle or dish spoon full of batter & pour on tawa.spread this batter with the help of round spoon back in circular shown in pics.remember the flame is low..

  17. Jab dosa ka colour zara change hony lagy tu spoon ki help sy zara zara oil kinaroon sy drip shown in pic.buht ziada oil ki zaroorat nahi. Zara zara sa drip krna hy.dosa ky oper nahi dalna.only side sy drip karain..
  18. Oil pour krny ky baad flame medium krdain.dosa cook hoga aur sides chorna shuru shown in pic as well.dont turn it,dont use spoon to lift it untill you can see sides are cooking itself & leaving surface of tawa themselves.layers bhi khudbakhud nazar ani shuru ho gi.jaisy ky pic main nazar a raha hy..
  19. Side ka colour change ho tu dosa lift in chimta bhi use kar skty hain.kinaroon sy pehly cook hoga then from middle.tu aik dam sy pora dosa nahi lift karain. Achi tarha sinkny dain..
  20. Place some masala over dosa at tawa.and roll dosa from one side to other with hands+help of sponn. Low the flame for some time till you roll it completely. As shown in pic..
